Key Cleaning Steps

Dry Brush First
Use a specialized brush (or clean toothbrush) to remove most soil.
Minimal Water
If the soil is caked on, use a rapid rinse under cold water, but do not soak them, as too much moisture ruins them.
Remove Defects
Use a small, sharp knife or toothpick to gently remove stubborn dirt or soft/rotting spots.
Wait Until the Last minute
Only deep-clean your truffle right before you plan to shave or cook it. Pre-washing leads to rot.
Keep Storing Step
Wrap individually
Wrap each truffle in a clean, dry paper towel.
Airtight container
Place the wrapped truffles in a glass jar or plastic container in the coldest part of your fridge (usually the back of the middle shelf).
Daily maintenance
This is crucial—change the paper towel every day. This removes moisture buildup and lets you check for soft spots.
The Rice Myth
Do not store truffles in dry rice unless you want to eat the rice later. Rice is a desiccant that will suck the moisture and aroma out of the truffle, making it brittle and flavorless.

pro tip
Truffle Infusion

Since truffle aroma is highly volatile, store your wrapped truffle in the same container as fresh eggs or a block of butter. The fats will absorb the aroma through the eggshells or surface, giving you "free" truffle-flavored ingredients for your next breakfast.
