Truffle (Tuber melanosporum),called the black truffle, Perigord truffle or french black truffle, is a species of truffle native to southern Europe. As this type of truffle are matured in winter, so we call black winter truffle in general.it is the most commercially valuable species in black truffle.

They have a black-brown skin with small pyramidal cusps. They have a strong,aromatic smell, their flesh is initially white, then dark. It is permeated by white veins which turn brown with age.

The fruiting bodies of the black truffle (Tuber melanosporum) exude a scent reminiscent of undergrowth, strawberries, wet earth or dried fruit with a hint of cocoa. Their taste, which fully develops after the truffles are heated, is slightly peppery and bitter.

Because this type of black truffle required extremely strict grow environment, have a very low productivity each year in the world, lots of the sellers mix them with other types of truffle( in black colour) to reduce the market price. Therefore, some buyers felt disappoint with the black winter truffle and start to doubt its value.
